Saturday Morning Pancakes…

I was searching for different recipes for breakfast for my daughter, her favorite thing in the world to eat is a cottage double with pineapple.  She literally would eat this everysingle day multiple times a day if I let her!  I thought maybe if I made her pancakes with blueberries or mini chocolate chips once in a while it might peak her interest to try something different.  I came across a recipe from Martha Stewart for classic pancakes that I knew I could make some minor substitutions to make them a bit healthier.  These are much different from the origional pancake recipe that I posted about here.  They are protein panckakes made with cottage cheese and no flour, these pancakes are much more traditional with just a few tweaks.

I am going to post the measurements for 6 pancakes if you are making them for your whole family or more than 1 adult and a 18 month old simply double the recipe and it turns out perfectly!


1/2 c Unbleached Whole Wheat Flour

1 t Truvia (any sugar substitute)

1 t Baking Powder

1/2 t Salt

1/2 c Skim Milk (I would use Almond for myself)

2 t Coconut Oil

1 Egg

Optional Add Ins: mini blueberries, chocolate chips, banana, or strawberries would all be delish!

*Cook on Med-High with a flat skillet

Calorie Breakdown: 1 Pancake- 65 cals 4 Pancakes (serving size)- 262 cals

For my daughter I will usually top these with a little bit of honey and a banana but my husband has been requesting these Friday nights just to ensure that I make them for him on Saturday morning and he loves them with chocolate PB2 icing.  This icing or syrup is the easiest thing on the planet to make and it is low-cal and delish!

1T Water (or to your desired consistancy)

1/2 t Truvia

Calorie Breakdown: 22 Calories


That means for under 300 cals you can have chocolate covered pancakes! I wouldn’t eat this everyday but on the weekends its a great way to indulge without blowing your entire day!

My husband requests these now all the time and they seriously are so easy to whip up it takes just as much time to make these than it would be to use a prepackaged pancake and you can customize them to whatever flavor you like!
